Founder of his company, Jean-Baptiste Dalloyau is the heir to this know-how. But he is also an innovator. He accompanies the development of a society whose appetite for pleasures puts the table in a valuable position. The XIX century will be that of gastronomy, gourmets, restaurants, banquets, and celebrations.

For the meals and the buffets that he delivers, Jean-Baptiste Dalloyau knows how to imagine the decorations worthy of the talent displayed to the Court by his father and grand-father.  His son and his grand-son followed his footsteps.  As for his great-grand-son, Achille Henri Dalloyau, he creates in Paris, in 1883, the first modern ice-cream store and establishes the pastry union.
