The founder of the company was Jean-Baptiste Dalloyau, born in 1747. A man who, proving his visionary intuition, sensed the Revolution coming, which would put the life of the Court to an end, and was going to favour the emergence of the bourgeois who would only have one idea in mind : adopt the aristocratic way of life.

This intuition was also very daring : stronger for a know-how inherited from generation to generation, stimulated by ambition, he opens in 1802, not one of these restaurants that started to multiply, but the first “Maison de gastronomie” that brings together all the skills linked with “great eating” and the “art de la table”. An innovative formula that attracts the curious from all over the world. He offers “take-away” dishes that the aristocrats had prepared for them by their cooks. He achieves, in the opinion of the gourmets, a success that drove, very naturally, his son and all of his descendants to continue what he had started. But even more extraordinary is that research done in archives revealed that while the Dalloyau were well established since 1802, well before that had they become famous in culinary skills, and had occupied various respected positions.
